Chocolates can be made from bulk- or fine flavor cocoa beans. Retail chocolates are mostly made of bulk cocoas. Adding emulsifier and flavors like Vanilla will give regular chocolates a hint of taste. Fine-flavour cocoa is however the most aromatic cocoa in the world. It makes up only 5% of the world’s cocoa harvest. The growing area and the treatment of the cocoa beans lend each fine cocoa its unique flavor. Rausch generally buys the fine-flavoured cocoa directly from the cocoa farmers. Rausch employees regularly visit the plantations and not only monitor the established quality standards, but also train and develop the cocoa farmers.
