This is exactly the question Jim Ashley and Pat Maris asked themselves when they founded The Outlaw Rum Company. During their time in Trinidad, they discovered their passion for high-quality rum. Back in Scotland, an unusual idea emerged: to further develop Caribbean rum using the cask expertise of the Scottish whisky world. The foundation is carefully selected rum from Trinidad & Tobago. But its journey does not end in the Caribbean. A second chapter begins in Aberdeenshire. There, the distillates mature for many more months in former single malt whisky casks from renowned Scottish whisky regions such as Speyside, Islay, or the Highlands. The goal is not a quick finishing effect, but a genuine further development of the rum. The cask complements the character of the distillate without masking its origin.
The result is a rum style that deliberately differs from classic Caribbean rums. Fruity notes meet fine vanilla, honey, and spices, while individual bottlings – especially the Islay Cask Edition – also develop elegant smoky notes. Each rum has its own personality, combining the warmth of the Caribbean with the depth of Scottish cask maturation.
The Outlaw Rum Company consistently avoids added sugar, artificial flavors, or colorings. The focus is on quality, cask selection, and craftsmanship. Limited single cask bottlings and small batches underline the ambition to create extraordinary rums for discerning connoisseurs.
